Dinh Tien Hoang street in Hue city has some Khoai cake restaurants. The owners of these restaurants are deaf but they create a famous brand of Thuong Tu Khoai cake.
The name of Thuong Tu Khoai cake is derived from the location of the restaurant, in the southeast of Hue citadel. The restaurant opened 40 years ago by the family of Mrs Ho Thi Tra.
How to make it
Each restaurant has 3 pans. The necessary ingredients are available including: the flour, shrimp, pork, egg, bacon and sprout. When the customer orders, the cook will pour flour and add other ingredients above. After 5 minutes, he will add egg and fold the cake. The cakes are very crispy.
Serving with this dish are fresh vegetables, green banana, cucumber and sour star fruit… The sauce is the special thing of the restaurants based on the traditional recipe of Mrs Tra. It is made from soy sauce, pig liver, meat, peanut, sesame and some secret ingredients. All the ingredients of this dish are checked carefully to ensure the quality of Khoai cakes.
